Shio : flavored with salt
Miso : flavored with soybean paste

Jiro-Style (Jiro-kei):
Many vegetables (generaly, bean spouts) and big meats are put on noodle.Its soup include much of back fat. It tastes very thick.
Tsukemen :
You’ll be served noodle and soup separately. You’ll eat noodle, dipping it into its soup. Generaly, soups of Tsukemen are thicker than Ramen.
